Mrs. F. Bentley submitted her recipe for Chocolate Sponge Cake in time for the Feb. 21, 1950 edition of The Townsite Reporter.
CHOCOLATE SPONGE CAKE
¾ cup sifted cake flour
1 cup sifted sugar
½ tsp salt
½ tsp cream of tartar
Add water and ½ cup of sugar to egg yolks and beat well. Add salt to egg whites and beat, when foamy add cream of tartar and beat in peaks.
Add half a cup of sugar gradually. Fold in egg yolk mixture and vanilla. Add flour ½ at a time and fold quickly. Avoid over-mixing.
Bake in ungreased tube-pan at 325 for 1 hour. Invert to cool.
