Mavis Bjorkman submitted her Pumpkin Chiffon Pie in time for the Nov 21, 1949 edition of The Townsite Reporter.
PUMPKIN CHIFFON PIE
1 envelope knox gelatin
¼ cup cold water
1 ¼ cups canned pumpkin
½ tsp cinnamon
½ tsp ginger
½ tsp salt
½ cup milk
1 cup sugar
To slightly beaten egg yolks add ½ cup sugar, pumpkin, milk and spices. Cook until think in double boiler. Soak gelatin in cold water for 5 minutes, add to hot mixture. Mix thoroughly and cool. When it begins to thicken add remaining sugar and fold in beaten egg whites. Pour into baked pie shell.
